Tim's Recipe #1: Fish and Vegetable Hotpot

  • 1/4 of a pumpkin
  • 2 or 3 stalks of celery 
  • 1 large turnip 
  • 2 carrots
  • 1 large onion 
  • 5 cloves of garlic 
  • 1 leek 
  • 1 can of chopped tomatoes 
  • 2 bay leaves 
  • 1-2 fillets of firm fish per person, skin on if possible (that's where the flavour is). 
  • salt and pepper to taste 
  • about 1 cup of good red wine (reserve the rest for a 'garnish' haha)
  • water 
Roughly chop all the vegetables and place in a slow cooker with tomatoes and bay leaves. Fill with water, set to 'auto' mode, and cook for 5-7 cooking time doesn't really matter so this is a perfect meal to start in the morning and come home to after work.

Half an hour before you're ready to eat, cut fish into medium sized cubes and place in soup. The fish will cook in the liquid and should just be falling apart when you come to eat. Season with salt and pepper as desired. Serve with crusty bread and enjoy.
